Title: Fried Zucchini Blossoms

1cAll-purpose flour
1tsCurry powder
1/4tsSalt
1cChilled club soda
1/4lbMozzarella cheese; coarsely - grated
1tbFinely chop'd fresh cilantro
16 Zucchini blossoms; pistils - removed if desired *
  Canola oil for deep-frying

Mix together flour, curry powder, and salt. Add club soda; mix until smooth. Let batter stand 10 minutes. In a small bowl toss mozzarella and cilantro. Stuff 1 tablespoon into each blossom, pressing ends of blossom closed. Heat 1 inch oil in skillet (375ø F). Dip the filled blossoms one at a time in batter. Coat completely. Fry, turning once, until golden and crisp. Drain on paper towels; sprinkle with salt. Serve warm.
